about
every city has restaurants that don't need you. they've been full for years. the owner knows half the room by name. the menu hasn't changed because it doesn't have to. you won't find them on a best-of list. you find them because someone who lives there takes you.
seated with boris documents those places. each entry starts with a local, someone with a genuine history with the city and a specific restaurant they keep going back to. they take me there. i meet the person who runs it. we eat. i write what i actually think.
